The coffee culture in Capixaba* land began in the second decade of the
nineteenth century and was heavily influenced by Rio de Janeiro state. It was
gradually consolidated as the main economic activity in Espírito Santo state with
its plant seedlings coming from the southern region of Brazil.
Capixaba farmers cultivate two coffee species: Arabica and Conilon (Robusta)
as Espírito Santo being the second largest producer of Brazilian coffee and the
largest producer of the Conilon type.
Coffee from Espírito Santo (Arabica):

• Most cultivated coffee varieties: Mundo Novo and Catuaí;
• Flavor: Full-bodied with high acidity and fruity;
• Some producing cities: Iúna, Brejetuba, Venda Nova do Imigrante, Santa Maria de Jetiba, Marechal Floriano.
Espírito Santo Arabica coffee is known worldwide as the "Coffee from the
Mountains of Espirito Santo", and has received several international awards.
Arabica coffee cultivation is one of the main economic activities of Serrana and
Caparaó regions.

Unwashed coffee processing - also referred to as natural coffee process or the
dry process, is what we would call the classic approach to coffee preparation.
Basically, this is the oldest preparation method that has been in use for
hundreds of years. In this process the coffee cherries are dried in the sun. Once
the drying process is completed, the green seed is then removed from the
fermented, dried cherry. However, this process still doesn’t require as much skill
as the washed process, meaning, it is a much easier process and widely used
among coffee producers around the world;
Washed coffee processing - also referred to as the wet process. The coffee
cherry is pulped by a machine called pulper. This means that its outer layer skin
is removed. Once this has been removed, the bean with its mucilage is
fermented in water for at least one to two days or sometimes longer. After the
fermentation process, the bean is then washed from its mucilage after it has
releasing its aroma;
Semi-Washed Coffee processing - The coffee in the cherry phase is taken to the preparation unit which consists of a washer and a peeler.
The washer separates two types of fruits: the buoy coffee (dry) from the cherry and the green coffee.
The green coffee and cherries are taken to the peeler, where the green fruits are mechanically separated by pressure and only the cherry fruits are peeled.
The peeled cherry coffee, still surrounded by the parchment and gum, can go directly to the drying yard, or rather pass through a machine called mechanical
degreaser so that exceeded mucilage is eliminated. It is very common to take the peeled cherries to dry on screen lined pallets, which facilitate its dryness
uniformity.
